Sweet fried quince and cheese
PREPARATION
Peel the apples and cut them into pieces. Put them to cook for 15 minutes in a pan with a little water. Add a few mint leaves, mash in a blender and pass through a chinois.
Cut the quince into slices of the same size as the ones of cheese. Make 12 sandwiches alternating cheese, quince and cheese in 6 and a further 6 of quince, cheese and quince.
Cover the sandwiches with flour, beaten egg and bread crumbs, fry in a pan with plenty of oil. Once browned, drain with kitchen paper towels on a plate. Sprinkle with sugar.
To present, place the fried sweets in a dish or plate, served with applesauce. Decorate the dish with a little cinnamon, currants and mint leaves.
